honey * a local treat * augusta, ga

Bri and I are watching Sesame Street and today’s word is “pollinate.” Some of the characters are transformed into bees. Watching them learn about flowers, crayons and colonies reminded me of something else that comes from bees. HONEY!

We’ve recently started giving Bri breathing treatments for her coughing attacks. The doctor says it’s too early to call it asthma. We were told that local honey would be a good way to increase her resistance to local allergens. It might make her coughing attacks decrease. So I started researching local honey suppliers right before Christmas – way out of season!

I found Deborah online and after reading her incredible story, I gave her a call. She was so sweet! She invited us to come see the bees, or the girls as she calls them and she told us all about their system for making honey. We bought a jar and she even gave us a free sample – a lotion bar made from beeswax.

We were delighted to meet her and learn about beekeeping. We were even more delighted when we tasted the honey that night at home. It was heavenly! Now, usually it takes us a year or two to finish a plastic teddy bear filled with honey. We don’t eat a lot of honey normally. But in the past week and a half we’ve consumed two thirds of this mason jar! It’s that good.

We now eat honey toast whenever we’re together as a family – breakfast, lunch or dinner. Bri helped me take these photos at breakfast this morning. We had scrambled eggs and honey toast. The photo shoot didn’t last very long though. We couldn’t resist eating that honey!
